Or I suppose it’s Great Grandma Enright’s recipe to me… Anyway, I have a sweet tooth & while chocolate is not my go-to food for satisfying it, occasionally I do love a chocolate cookie. These are great & super easy to whip up. And as long as you use gluten-free oats they are gluten-free 🙂
No-Bake Oatmeal Cookies
3 cups (quick, NOT instant) oatmeal (Bob’s Red Mill makes certified gluten-free oats)
1/2 cup coconut
1/2 cup nuts
2 cups sugar
5 Tbsp. cocoa
1 tsp vanilla
1/2 cup milk (I used coconut milk)
1 stick butter (1/2 cup)
In a heavy saucepan put sugar, cocoa, vanilla, and milk. Stir well. Add butter.
Boil this (full rolling boil) for 1 minute. Stir in oatmeal, coconut and nuts.
Drop on wax paper lined cookie sheet to cool.
Yield: 24 cookies
