
I had a lovely Thanksgiving yesterday, went to see Wreck-it Ralph (& Paperman!!!) with the ex. The movie was great & I was happy to see Paperman again. Brian created much of the technology used to make Paperman, which I got to see at the US premiere & just love, go see it!!! Then I came home and put up my decorations:
Finally, I started a batch of this candy. I make this every year now that I’m far away from my mom and can’t just rely on her supplying me with it throughout the holiday season. It always gets rave reviews & I end up with requests for it now 🙂 Oh & it’s naturally gluten-free, which is wonderful for me.
Chocolate Candy
Ingredients:
2 boxes powdered sugar (approx. 8 cups)
2 sticks melted butter
1 can (14 oz.) condensed milk
1 1/2 cups shredded coconut
4 cups chopped nuts (I use pecans)
1 tsp vanilla
1/2 maraschino cherries, chopped (optional)
1 block paraffin wax (Gulf Wax canning wax, it has 4 blocks in the box)
1 bag (12 oz) semi-sweet chocolate chips (2 cups)
Directions:
Mix powdered sugar, butter, coconut, milk, and vanilla. Add nuts and cherries. Can be made up to this point and refrigerated for up to 3 days.
In a double boiler (I use a glass bowl resting in a small saucepan) melt wax and chocolate chips.
Shape candy into small balls, I use a small cookie scoop. Dip each ball into chocolate mixture and place on waxed paper to dry.
Store in refrigerator.
